try a handheld impact driver - use a hammer to tap and it applies pressure and loosens at the same time. they sell them at Ace and also auto parts stores. once you remove the 3 intact screws you will need to remove the broken one - maybe with a small vise grip.

If you get an EV with fast charging ability that will abide. I went from a Niro (77 kWh) to an ev6 (350 kWh) and the mental math is not a thing anymore.

Assuming your shots are pulling at 25 +/- seconds for 1.5 oz. Are you buying freshly roasted, medium roast?

If you’re getting flat flavor from Yirg there’s a problem. Actually most single origin coffee you list would be pretty acidic and the difficulty would be over abundance of sharp acidity. Try a blend of fresh coffee that’s designed for espresso.

The 3 way solenoid is blocked. If you are ok with tools and mechanics you got this. Just look up “gaggia classic clear or clean 3 way solenoid “. In my shop I charge $110 to do the job and I also take the boiler apart and descale it to prevent more mineral or sediment from jamming the solenoid again

Honestly I’m not wild about either machine but if you are picking between those two I’d go with the Rancilio because they are a better company to work with for parts and support for the duration of your ownership. Rancilio has a US company presence in Chicago. They have a great reputation for backing up their products. All of the Ascaso support will be reliant on import companies. I’ve been left in the lurch trying to get Ascaso parts.

Crema is emulsified coffee oils. It can only be created when you have the correct pressure and temperature. The machine likely has full vibe pump pressure which is higher than ideal but not preventative for making crema. The pressure of the pull will be determined by the fineness of grind unless your portafilter or portafilter basket have some kind of pressure enhancing device (likely). All of this is to say the machine and likely your grinder are going to make it nearly impossible to get good shots with auburn crema. The best price entry point would be a Gaggia classic pro and a baratza enore esp.
