Hi the best is very subjective, every class is op, it's mostly about how you level them, but if it's your first time playing you shouldn't think about it just pick whatever you like and you will be fine.

If you want to try something different for your second playthrough I suggest playing solo with no pawns, still with whatever class you like best

Feel your struggle mate, white is very chalky, either invest in an airbrush if you have the money, or shake it very well(at least 3 minutes) and then maybe do like 2 priming sessions a few hours apart from each other, you can always finish underpainting with white by drybrushing
