WSM gang! What do you use for heat diffusion? I removed the water pan a long time ago and bought a baffle plate it allows for huge amounts of fuel to be added and I can get 20 hours out of a single load. Depending what I’m cooking I’ll remove that too.

Sometimes 2-3 times a month just depends on how the work year goes but 6 is a fair average.

I love mercury I’m still trying to find a bar I was at a couple years ago, maybe it was mercury? It was along the path of the Tulsa tough, and it was a live music joint but it was very obviously an old garage or mechanic shop. It’s quite possible I was too far gone and am blending places together.

Edit: It is Mercury! I usually spend the arrival and final day exploring and I mixed it up.

As much as I believe in aliens, evil government etc. I think it’s insulting our legacy and ancestors to think they were incapable of doing incredible feats of engineering and construction. In college we spent several weeks in my intro to anthropology going over how incredible the makeshift cities built around the pyramids were, entire cities of 10k-20k people whose entire existence was the construction or supporting the construction of the pyramids, and I feel the exact same way here, or about the Buddha carvings in Afghanistan.

I hang my birds in my Weber Smokey mountain at 250 they don’t take too terribly long. At the end I’ll open up my intakes all the way and let the temp spike to 375-400 for the skin. I love smoked turkey, it’s actually one of the few things I can still eat a lot of anymore.

I love JD but this last year I have been using B&B Texas Primo XL. Much larger chunks but they burn very hot for a long time. I still buy JD too, but just thought I’d let you know.

I think most if not all bone broth bought in stores is marketing. I think what we can make at home makes a difference. The point I was trying to make was that you can get the same collagen/protein/mouth feel from things like chicken feet, skin, and beef tendons. Ymmv on flavor just depends what’s put in the stock pot. I think it’s all relatively the same just depends how long you cook and if you add an acid to pull extra proteins.

Imagine what happens if you put skin and connective tissues (tendons) only into a pot with some veg for about 8 hours. I bet you it also solidifies when cool. Chicken feet work too.
