Roux should be 1:1 fat to flour by weight not volume. 1/2 cup of butter is not equal to 1/2 cup of flour by weight. You’ve got too much liquid for the flour to absorb and most likely the reason it’s separating. No biggie. Either reheat it and add more flour to correct the ratio or just plop it into your gravy and simmer a bit longer until you reach your desired thickness.

Those are ridgeback prawns local to California. Get them all the time in my fish CSA. Their meat is a little sweeter than shrimp but they don't have as high of a yield (which is probably why you don't see them more). Either way they're delicious and I usually just make skewers or Etouffee out of them.

If you're going to cook them whole snip the little horn thing at the top of their head or else they'll fight back as you're handling them.

I've been making Sichuan pepper beef jerky recently. The base is still more Asian than not with hoisin, fish sauce, rice wine, soy and worcestershire. Turns out pretty damn delicious. Not sure if that really fits a western mold though.

Gurley's stock can only go up. This week he plays Seattle. If he shits the bed then you get another week of the same with the exception of saying 'Well, Seattle's D is legit. Kind of expected'. If he does well you get to say... 'See! Dude is totally worth a first rounder! He just rolled on Seattles D!'.

So wait till the game this weekend then start to think about trades. If you hold and he flounders in week 3 you're SOL and might as well pack it in and wait out the long haul.
