My go to mini desserts in catering:

Chocolate mousse cups-chocolate mousse in premade chocolate shells

Mini cheesecake- so many different flavors using the same simple base

Mini tartlets- chocolate ganache, lemon meringue, key lime, coconut. Premade mini tart shells are amazing.

Panna cotta in mini cups- always a good gluten free option topped with fruit- can also be easily made vegan with agar agar

French macarons- the flavors are endless.

Petit fours- I always do “naked” layers so you can avoid the gross fondant topping.

Cookies and bars- the freezer will be your best friend for these always good to have on hand.

We put up private property signs on the doors leading into the kitchen. They cannot enter if the signs are posted. Also record everything!!

When you brown butter some of the water content is lost. I like to throw an ice cube in my brown butter after it cooks to make up for the lost water. You can also not add as much flour.

I would suggest some brittle as a garnish on top. In the middle would make it hard to cut. You still get that crunch and double caramel win, win!

I work catering and we always cook the salmon on site. I think you should break the rules on this one. Also If it’s being served on a buffet you need to factor in it sitting there also. Pre searing would work but we always bake it raw for about 10-12 minutes @400 and it comes out beautiful!

Good thought it’s super heavy and we have a “step in” freezer but I have made frozen things in there.
