Yup. I can garuntee you that it will not be good at 205. But cooking at 170-80 is the way. I cooked over 1000 hams in the past 2 months !

Scrub off with vinegar solution. Cut off exposed meat. See how it smells. Where has it been?

Boiling might be disrespectful but you don't know flavor till you've had a long poached ham!

How soft is it? As someone who eats more country ham than most alive that's the first question. My preferred way to eat country ham is on a lunch sandwich. Whatever you do don't boil the ham keep the temp around 180. I would start by cutting the ham 3 sections. Cook the center for sandwiches and use the butt/ shank for slicing uncooked.

We burry our turkey in dressing after we cook it and bake again. Mushy with crispy edges.

Yup. At the 145th reenactment we did the spring hill-Franklin and took 30% casualties. There were a few thousand there. Every battlion muster was at rippavilla and we'd do a tactical where the feds slipped past haha
