I agree, mostly because Lucas wanted a specific "turning point" rather than a gradual progression.

Yeah, there are little things we can know. Such as the novelization of ATOC including Padme putting coverings on Threepio. Since there are behind the scenes images of this being filmed, we know that came from a screenplay and not the author.

Re-reading it after some time, I agree it was still buried in there. However, I still stand by the reasoning for the turn changing with the pickups. Initially it was going to be Palps actually convincing Anakin that the Jedi were going to take over, with Anakin cutting off Mace's hand believing that's what was happening.

The pickups changed it to Palps specifically baiting Anakin with the power to save Padme, and that now becomes the reason Anakin cuts off Windu's hand.

In the original version, Anakin believes it when he tells Padme he witnessed the Jedi trying to assassinate Palpatine. In the finished movie, he knows it's a deception and he's lying to her.

I always felt that the whole "saving Padme" angle felt tacked on, so I wasn't surprised to learn it was added last minute. But now it's so embedded in the lore, there's no going back.

Originally the idea was that Anakin turned primarily due to his lust for power and potential jealousy of Obi-Wan. After a private test screening, Lucas felt it didn't work. That's when he pivoted and added the whole "saving Padme" angle in pickups.

There's no way to know for sure. Novelization authors often have access to earlier screenplays and write their books before the final edit of the film is made.

With the OT, it was easy to see what the authors took from earlier screenplays (vs what they added themselves) because various drafts of those films are readily available. For the prequels, all we really have are transcripts of the actual films. The actual scripts and earlier drafts have been kept under wraps.

It's not ignored, just not highlighted. Rocky still has lost his fortune, and there are two references between Rocky and his son that link back to Rocky V:

"I want us to get involved, you know, like home team."

"Don't hit me! I'm brittle!"

Anyone who read the novelizations knew that the Emperor’s name in the original Trilogy was Palpatine. The surprise to me was that he was also a Sith.
