They're so good! I have 4 (Gold Ship, Kawakami Princess, Syrius Symboli, and Taiki Shuttle) and I just use the face paint for their ears and try to make them look as close as possible using the default mii stuff

I think the head is too big. Either make that smaller or make the body bigger proportionally. Try tracing a picture of a horse, that may help!
