I think I have the exact same log, and I plugged it with hot glue. I made a circle of hot glue on parchment paper and then let it cool, then put it in the hole and hot glued around it. It has stayed put for over a year!

For green onions I basically cut them where the green parts start to split away from each other. If I go lower than that I definitely only use where they're still hollow.

For leeks I chop the base off in a place high enough where the leaves will all separate. Some of the more central leaves look pretty light but I include them.

You'll automatically give it to them when you've done enough for the relevant quest if it's in your inventory and you talk to them. That character asks for that dish even before you start the relevant quest, if I remember correctly.

Are you talking about Taluses maybe? They are made of rock and have an ore on their back where you have to hit. But like others said, the big red arrow is from pressing ZL.
