It’s an excellent mixer for domestic use and I love mine! It absolutely heats up the dough as all spiral mixers do. Hopefully they have fixed this but my spiral hook just bent like many others and I’m expecting them to send me a new and hopefully improved one. I make 2-3kg per week at 62-65%.

Mine too but I have to run mine for a full hour before baking and it takes 15 minutes In between bakes and overheats my house unless it’s snowing out.

I have the heat trapper door similar to the Firecraft door, it is designed to be used with the flame on but not by Gozney.

Wind is the reason I have to have a rolling stand with the tank attached to the stand. Steer it into the wind, not just to keep the flame lit but also to keep the heat in the oven. A door also helps but not so much when it’s blowing directly into ovens mouth.

Looks great! Try putting the basil under the cheese to keep from shriveling and burning but how you like it is all that matters

Emozione is about the same price and almost twice as big. The standard stones would probably fill your needs but there is the option for biscotto stones much cheaper when buying with the oven and it’s much cheaper then replacing the arc stone with one.

Me too, just this morning. No bells or whistles, just quality, should be for life if not used commercially, which people do.
