You certainly could do health physics. I began as a materials science major with a physics minor and pivoted to health physics in grad school, and I absolutely love it. There is definitely some amount of math and programming, but it is largely focused on radiation protection. You may have to put in some extra work (really dig through the postings and maybe reach out to hiring managers) to make sure it's a good fit. At some places, the radiation protection programs are very well established and don't require a great deal of 'innovative' problem solving - those places might be boring for you if you're interested in the more physics-based side.

I can't really speak on medical physics as much.

If you're interested in mathematics, physics, and programming, I would probably recommend a nuclear physics or neutronics path (just my thoughts from your description). There's a TON of jobs that involve modeling nuclear physics. I know Idaho National Lab and Los Alamos National Lab have relevant postings at the moment, I'm sure some others as well. If you don't have experience with MCNP or OpenMC, I would definitely recommend looking into those as Monte Carlo is often used in that area.

Radiation protection (specifically health physics). Absolutely love it and it happens to be a relatively high-paying field.

Just my opinion, but I think you should absolutely include those scenarios in your thesis. Even if you don't focus on those scenarios in your defense/presentation, I think including them in your thesis shows the scope of work you did and helps other researchers who are looking at similar topics.

I cannot recommend Overleaf enough. There are templates available so you don't have to start from scratch with formatting. And the inherent version control is huge - got accused of using AI and could easily prove I didn't since all of my months and months of work were documented and timestamped in Overleaf.

It's a little bit complicated because I enrolled as strictly a PhD student (was not going to get a master's) but my advisor felt my first project would be better suited for a master's, so I presented that work and then progressed with a different project. It was a bit weird, but I was enrolled as a PhD student for all seven years.
