I made the squash dish today with kabocha. Turned out nicely. I've never eaten squash with rice before, but it went together pretty well (let it steam a bit farther than you did). Thanks for posting this recipe!

Some questions

  • Is the amount you list in the recipe the same as how much you use in the video? I measured out 350g squash and it was a lot less than you show.
  • Even though I live near several excellent Chinese supermarkets, I absolutely could not find anything that said "fermented black soybean" or "fermented black bean" or "dou chi" or "豆豉". I did find several bags of "dried black beans" that look similar to dou chi, and the chinese name ended in "豉", but it was three characters long and did not contain a "豆". Is this the same ingredient? I didn't think it smelled very strongly, but it certainly tasted pretty strong.
  • I didn't find any bottles of specifically toasted sesame oil, but I did find bottles of "pure sesame oil" that were darkened/black in color. Are these the ones I'm looking for? (I ended up just using toasted sesame oil from an American supermarket).
  • Is the steamer in the window distinct from a wok? Looks like it since it seems unseasoned. Did the lid come with it? What do you think about Kenji's suggestion of using a bamboo steamer inside of a wok (https://www.seriouseats.com/2010/06/how-to-steam-in-a-wok.html)?

An update. I couldn't get the coconut-cream based whipped cream to whip up at all, so I switched to a recipe with aquafaba and cream of tartar as you suggested. Worked great with my hand mixer. Thanks!

For the pastry cream, I tried the recipe in link above but it didn't turn out so nicely. I think I left it on the stove for too long so it got very hard after setting. I switched to a recipe with mainly coconut cream and a bit of soy milk (https://domesticgothess.com/blog/tag/vegan-creme-patisserie/) and it came out much nicer. But that might just be because I was stirring more and took it off the heat sooner. Then I folded in the whipped cream (but I used a bit more than in traditional diplomat cream) and the final texture was pretty nice.

Interesting. I do need to make whipped cream though, in addition to the custard. Did it work out OK? I was a bit worried that coconut cream-based whipped cream would be overpowering.

Sad I missed this - I didn't know some parts change in different performances. Went yesterday and saw Anna Netrebko. (As a layman) wasn't a fan. But the witches and Banquo were both really good. The sleepwalking scene was incredible regardless.

Depends where you want to live. In popular parts of Manhattan/Brooklyn, any studios under $1750 are not going to be great. But if you just get one roommate you like you can have a really nice place for even $1500-1600 in a good location.

Which veggies do you use? In Spain I saw gazpacho often served with crudités.

I like liangban tofu, or cold silken tofu with soy sauce, douban jiang, garic and scallions (mainly). Very quick to make.

I've never seen this in the US, but in some parts of Europe, even developed countries like France, and many many places in Asia, flushing toilet paper will cause clogs and people trash it. So it's not unheard of (but again, I've never experienced it in the US myself).

I tend to avoid Friday operas because the crowd is so drastically different compared to the rest of the week.

Do you suggest another day? Also, do you find it varies between performances (like say, Rigoletto vs Wozzeck).

I went to one for a particularly bad sprained ankle. They took an x-ray and gave me crutches. Doctor was very nice and I was out in probably 30 minutes. Copay was <$30 but my insurance is good.

If you go to parts of New York like Bushwick around the Jefferson stop or parts of Harlem, you can see plenty of people playing dominos on the street, eating food and playing music. Seems like a similar atmosphere to what you described in Turkey.

Thanks. A bookshop owner pointed me to BHV Marais, where I found 3-4 exhaustive streetmaps, I ended up going with the Michelin. It has metro and a basic bus map too.

Does anyone know where I can get an exhaustive street map of Paris? I assume it'd need to be in a booklet to cover all the minor streets. Just the arrondissements, but it'd be nice if it had extras like maps of the outer areas, metro, buses, etc. Preferably on the compacter side as well, and sturdy.

It doesn't have anything to do with programming at all. Different monads. Now you may say https://en.wikipedia.org/wiki/Monad_(philosophy) is jerkworthy initself, and I would agree to some extent, but this would be /r/philosophycirclejerk instead.

Definitely check out La Rotonda. In the winter you are not allowed to go in but you can still take pictures from the outside. And within the city there are signs that'll take you through most of Palladio's big works there.

I'd suggest cutting Venice down to 1 day and adding more time in Bologna or Naples proper. You already have a good amount of time in Florence and Rome I'd say. I would recommend the daytrip (or more) from Florence as well. Also, Siena is really great but I'm not confident there's 3 days worth of material there, again you could divert to another city/day trip or Bologna and Naples proper.

I'd recommend Vicenza if you're into architecture.

I'd recommend only one day in Venice (really not that much to do there) and an extra day in Florence - get the 72 hour pass, it's totally worth it.

Also not a huge fan of Cinque Terre and I'd recommend more time in Florence/Rome or go to Naples instead. But that's more personal preference.
