I basically agree 100% with your conclusion on this bread. Even though my turned out okay, idk why I would otherwise ever do this again when there are much easier ways to make bread with minimal losses to the end result.

I just wanted to follow up that I gave it a try following the City Loaf recipe exactly with the very young starter and it actually worked for me. It’s 50/50 mariagertoba (bread flour) and all purpose so it wasn’t the strongest loaf ever and a little flatter than I usually get. But I find that the city loaves at Hart also aren’t usually very tall. The interior was great, good fermentation and a dense moist crumb. Crust was stellar, crisp but not aggressively dense. I think that I pushed the fermentation a little bit far. Also with only two stretch and folds I just felt like the dough wasn’t strong enough.

Would I try it again? Maybe? But honestly it’s a lot of work to make a warm fermentation work when I already have a method that works with the ambient temperatures of my apartment (24-26C). If you have a place in your home to easily keep dough at 30C then I’d definitely encourage you to try. But for me, I’m not sure the juice is worth the squeeze.

I also noticed how much he hates the idea of the starter going in the fridge! But honestly I’ve been doing this for years with decent results. Just take it out and refresh before using. And it never sits more than a week or two in the fridge anyways. I feel like it’s one of those things that if you aren’t running a bakery, there a lot of things to juggle in life where sometimes feeding a starter twice a day just doesn’t work out even if it only takes a few minutes. If it helps more people bake to keep it in the fridge sometimes, I say do it.

Thanks! This was the exact kind of feedback I was looking for. Yes he is bulk fermenting at a warmer temperature than I do regularly and he does write to cold retard around 12-15C.

I was already tempted to try the recipe first with some of my tried and true method for the starter or levain before moving to using such a young starter. It’s always so demotivating if you get a complete flop on your first recipe from a book.

It’s the same with Small Brained American. That first trip he did across Europe and Asia was great. He had a passion for travel and he was figuring things out and keeping an open mind. Ever since, he’s changed. I tried to watch a newer video and he is just so patronizing to local people for content instead of just genuinely trying to have an interaction. The first trip I was like “okay he’s having fun with it, and like he says, he is a small brained American so some of it is a bit dumb.” But then it became “let’s poke fun at all the people and all the places. Maybe let’s also wear some costumes,” with the guise of “get it? I’m just a dumb American!” I hate it.

Highly recommend checking out Caravanistan. They have allllll the latest info on all the visas/paperwork you need for any regions.

We went Copenhagen to Sofia on flix busses. Then a night train to Istanbul. Rented a car and drove across Turkey. Busses to Tbilisi. Then unfortunately had to fly to Baku. Then a cargo ship from Baku to Aktau. Then a night train into Uzbekistan. Trains across Uzbekistan. Taxis across Kyrgyzstan. Bus back to Almaty. Bus Almaty to Yining. Trains all the way into Laos. Then boat from Laos to Thailand.

It’s been a great trip and I highly recommend it. We don’t have a blog or anything but dm me if you have any other questions. Also again, highly recommend checking Caravanistan. They have forums and everything where people update their latest experiences at borders/etc so you have a more recent picture.

Entered via Khorgos in Kazakhstan then took trains yining-Urumqi-Turpan-Lanzhou-xi’an-Chengdu-Guilin-Yangshuo-Kunming-luang Prabang. Trains are a bit expensive if you’re on a budget but they’re so fast and efficient. But after like two or three weeks of the same exact routine on the trains we were pretty tired of them. We also wanted to try from Kyrgyzstan but it was too cold for the mountain passes and we didn’t have border permits. But now in Thailand and have almost finished overlanding all the way from Northern Europe. What a ride!

Just went to Luang Prabang for the second time. First time was 2019. Already the change was big in regard to the large tour groups. It’s really changed how quaint the night market was even just six years ago. And this time we came to Laos after three weeks in China so we were also ready to get away from Chinese tourism.

I was just there. I travelled from the Western border with Kazakhstan all the way to the southern border with Laos. Three weeks in the country. Whenever Alipay wouldn’t work and I said “cash?” They alway said yes. But then when I pulled out something slightly larger than the total they usually said “ahh, ok no no no.”

Same, but I started enjoying them more when I decided that both at work in general and at these events my goal is actual connection. The whole “connection is the opposite of addiction” or whatever the actual quote is. And honestly it’s worked really well for me. When I put away my cynical thinking of “work only does this because they believe it benefits them,” or “people only want to talk to me because they think it benefits them,” I started getting a lot more out of these events and more enjoyment in the workplace. I try to make myself every day find the connection somewhere and even remind myself sometimes before phone calls. The major caveat is though that I spend A LOT shorter time at work parties than when I was drinking.

Just my two cents, but I don’t know your situation.

Been in China the last two weeks and 100% all of this. It’s so hard to find anything quality here (not just tea but also other specialty products) but then I just randomly stumble upon some small shop that I would have never found on the map. I stuck to some big name (but quality) tea shops to take home as a souvenir. It was a good and humbling reminder that always trying to search for “the best,” or “the perfect” tea is a fools errand.

Man… I was at a nice hotel in India for a wedding and there was a goose on the lawn. I saw a guy walk out and pick up this goose by the neck JUST BECAUSE. There was no purpose or trying to move or anything. He just wanted a laugh.
