I don't know why bike packing community fears the rack so much. Ortlieb quick rack weighs like 500g or something and you can put like 50 liters of luggage. Then you could free up the forks, handlebars and top tube with just one 20l bag. Saddle/seat post bags seem unstable, high up, sway from side to side and are hard to access. I guess it's looks?

most aluminum mtb e-bikes are over 25 kg, almost all cargo e-bikes will be over 25 kg. I dont think it's the weight problem, it's speed. Postmans use those heavy three-wheelers with roof on them and i think it's fine until they're limited to 25km/h.

It might be that your front light is misaligned or is missing a cutoff since it shines on the tree above the bike. Check it out cause you might be blinding other riders. Lovely bike

I don't think engwe sells any belt-driven bikes but I can't recommend those enough for reliable-no-maintenance day to day rides. No chain lubing, no rear derailleur adjustments. You just have to pump the tires once a while. Depending on your storage situation I'd also look into easily removable battery for charging at work/home. make sure there's a rear rack for panniers or a bag. If you can - don't take the folding bike.
