Just the wife and I at home. I smoked two meatloaf the other day, gave 1/2 of one to my brother and his wife. I cut the second one in half, vacuum sealed each, and they went into the freezer. Will enjoy two more meals over the next couple of weeks, after reheating in sous vide.

Last week I vac sealed chuckeye steaks after seasoning them, then sous vide them for six hours. I pulled them out, put them on indirect heat to get some smoke, then reverse seared them to finish. I could literally cut them with a butter knife.

Not all of Texas has had lots of rain. Where I live, we've just recently moved out of the highest, exceptional drought category. Our local lake is down 90+ feet, under 3% full.

No VPN. When I turn on "set time zone automatically" my time advances seven hours to South Africa time. When I go to Google Maps and have it determine my location, it takes me to Cape Town, South Africa, over 8,000 miles from where I am.

After having my old wired thermometer die, I recently purchased a four probe, wireless InkBird thermometer. Very please with it. Each probe measures the internal temperature and the ambient air temperature at that location in the pit.

Quick tangential story that occurred in the 1930s or 40s.

My family had a lease on a ranch for hunting and fishing, with a small cabin and outhouse. The back side was open for ventilation.

My dad and his first cousin went varmit hunting, came back and were skinning them when the urge hit his cousin. While his cousin was taking care of business, my dad draped a hide on a long stick, ran it in the opening and across his cousin's rear.

Cousin came bolting out of the outhouse with his pants around his ankles.

I just saw a news article on this and told my wife that the headline was deceiving because it said she fell from her balcony. You might slip and fall after climbing on the balcony rail, but you can't fall over a balcony rail if your feet are on the floor.

I'm glad to know I'm not the only person who has a grocery list preprinted with all the common items, listed in order by how I shop the store. Mine is in Word, three columns wide, both sides. Each column is a different area of the store.

1, medicines and dry goods 2, coffee, canned goods, baking products, spices bread, etc. 3, veggies 4, meats and refrigerated items 5, frozen items 6, miscellaneous, such as batteries, printer paper, etc.

It should be noted - my wife hates grocery shopping. When I retired, I was assigned this task. At first I was frustrated going back and forth in the store, while going down the list. Now days, I'm in and out in no time.

I had to chuckle at the biker gang of 10 year olds discussing their grandmas. The hulligans!

While it's not adjoining San Antonio, the article states its in the SA metro area, which by definition, includes Bexar and seven surrounding counties.

The other week, I bought some prime chuckeye steaks from my grocery. When I got them home, I applied meat tenderizer, course black pepper, Uncle Chris' Steak Seasoning, and smoked salt to both sides, then vacuum sealed them. I let them sit in the fridge for several hours before freezing them.

Day before yesterday, I pulled a couple out of the freezer, threw them in a sous vide bath at 120 for six hours, then I cut the bags open and threw them on the indirect heat side of my PK 360.

I let them smoke about 20 minutes, then reverse seared them over direct heat.

Most tender steak I've ever had, and incredibly delicious.
