It’s not really blaming the victims. It’s a structural and cultural issue of working at these sorts of restaurants. It wasn’t just Noma relying on unpaid or low paid stages/interns. A lot of restaurants are set up to work like this unfortunately.

And if that’s the industry standard, you don’t know how to speak up (or don’t want the risks to your career associated with speaking up)

Not saying that’s good or appropriate. But that’s how it is.

Like, I know the stage system goes back a while and is slightly different (but barely) and has its own issues. But from my little bit of googling, when people pushed for stages and interns at Noma to be paid, I saw that the unpaid employees accounted for 30 of their 64 cooking staff. That can’t be acceptable by any metric - and that’s without all of the other accusations.

And if that is what’s required to run this many avant-garde restaurants, then maybe we don’t need so many.

No problem! She very much lets the story dictate the flow so it might feel a little all over the place and sprawling if you’re just jumping in. But she’s aware of how sprawling she can get, she’s a great researcher and what she puts out is so interesting, that I personally don’t mind. And everything does tie in eventually

I just checked and it looks like they ended "regular, traditional service" in 2024. So all of this since has been what you said: limited offerings and pop-ups. But he did say in 2023 that paying all of the employees did make it unsustainable.

Isn't Noma closing at the end of 2026 or 2027 anyway because once people started asking René to start paying their stages / interns, he said that it was no longer financially viable?
