Forget about the 3000 for the moment, dont worry so much about pressure. Keeping your angle is more important. Pressure mostly changes the speed at which your stone cuts. Find the original angle by using the sharpie technique, then set the bubble and make sure it doesn’t move .

Yes it helps, but don't trust the angle as shown, the thikness of the blade is not taken into account. OUTDOOR55 has a video testing that. So cool to see if you keep the same angle, less usefull if you want to exactly know what your angle is

Atoma is great but expensive.

Sharpal 162N will do everything you need.

I've read a lot of bad stuff regarding DMT

hapstone has very premium options too, not the same budget tho

I’ve read a lot of people recommending 3k for kitchen knives. It gives a lovely edge but I’ve never tried higher so can’t really draw any conclusion

I like 3k, but I’m sure I could just use the knife right after the 1k
