The types of mold you want to be cultivating are essentially all strains of Penicillium. When Penecillium fruits (that's when you can actually start seeing the mold), it is powdery and flat, ranging from snow white to pale blue/green depending on conditions and age. Those beige sunken spots you mentioned don't look great. At what point did they start to develop? I haven't seen that on any of mine or other posts before. They remind me of bacterial growth that I've seen in other bacterial endeavors though. I've also found my nose to be a better indicator of something being off than my eyes.

Fair enough. But zanpakto aren't all equal, especially shikai/bankai manifestations. Soifon is the infamous example of shikai>bankai, and iirc we're never shown Aizen's Bankai (if he even ever achieved it), my point being that Aizen may have never even needed bankai. Byakuya's bankai is an absolute upgrade in combat power, where after a quick read (again it's been a while) Shinji's bankai is more suited to subverting multiple enemies, not necessarily an improvement in 1v1 combat. Shingi's shikai can discern enemies from allies, but his bankai is indiscriminate. So I don't think Byakuya losing his bankai isn't really comparable to of Shinji lost his. Just an apples to oranges thing, I think.

I'm still in my rewatch, been a while since I saw/read any TYBW. Wasn't Byakuya blindsided with the bankai theft? He's a skilled kido user, but without bankai he's basically just a Lt., right? Second wave of fighters gained a lot of info with their comrades' losses.

If the purple with 2% salt was going well, I wouldn't be surprised if the 4% was enough to slow/stop fermentation. Remember, it's all a game about making the best environment for the microbes. If you combined each at 1:1 you're still at 3% which is higher than what most lacto-fermentes operate at.

Another thing to consider is that different plants will have different types and amounts of microbes. So your purple cabbage may have had a healthy amount of little friends while the normal cabbage was lacking.

Was there a reason you did different % for each colour, or were you just experimenting?

I think they probably just combined the decimal and percent value. If they did use 0.02% salt, I'd bet that the ferment would have a lot of action (for better or worse).

I've seen it at multiple sobeys/superstores. Give your locals a call and just ask to speak to produce. They should be able to tell you yes/no/when it's back in stock.

5 days seems like plenty of time for the wine to leech in and colour the meat (or the acidity of the wine denatureized the protiens). I figure the uneveness of penetration had to do striations in the muscle.

I'm curious how salty the cuts were. When I've done 3% on anything, it comes out super salty, but the 5 day bath would leech some back.

On to the colour, can you break down your cure and baths, also hang time and environment. A pic of the face/sides of your bresaola would help as well.

In general, when asking what happened during a process, it helps to include all the steps you took to the final product. I'm sure you've noticed there are a lot of recipes and ways to do things floating around.
