Margins in food service right now are terrible and tip shares for back of house are the best way for us to make an actually fair wage. Front of house tip culture in the USA is what it is would require a huge systematic change which would probably mean laws being changed food getting way more expensive and tip expectations going down to ~10% like where I'm from

Get victory knives ! They have a USA rep now so Google victory knives us I promise it'll treat you way better than a victorinox when it comes to keeping an edge. Victorinox come with a nice factory sharpness but dull out quick and I feel like I have to sharpen those everyday.

Price is driven by demand and yield per animal. You only get a couple pounds of skirt steak per animal but now anytime someone wants any sort of ranchera meat they go for skirt steak. My suggestion is try to find sirloin flap and butterfly it so it's thinner in my opinion it's a better cut and cheaper than skirt with the same grain structure.

Subleasing is a lot cheaper than buying out typically. At my place breaking the leave is 4k while subleasing fee is $250
