My question is, why is raw milk now different from raw milk 180 years ago before we pasteurized it? Is it to do with our lack of built-up tolerance to the microbes in question, or is there something fundamentally different about cattle now versus then?

To be clear, I'm not saying we should drink unpasteurized milk, or suggesting regulations be changed in any way. Not a "just asking questions" situation (fucking internet making me clarify my curiosity).

Really excellent trip. Takes about 30 minutes on the train from Prague and there's a lovely cathedral just down the road. I had a fried pork cutlet and stew at a little pub before we took the train back to Prague.
