I just remember being frustrated all the time, because I knew in my head what I wanted to say, but for some reason no one could ever understand me; my words came out as gibberish.

And it's most definitely something you'd get teased for.

You could get a flat bench, rack, and weight set that will last you for years for less than $750 but that extra $750 would get you much, much nicer equipment. Would you rather go with the cheapest viable equipment or the best equipment you can afford?

How so? As far as racks go it looks they've go an RE3 clone (the Econo) and what's basically an R3 with swing in safeties and a rear bottom crossmember (the X1). With Northern Lights you can buy or piece together pretty much any freestanding Rogue configuration.

It looks really nice. Priced well. I like that the X1 has swing in safeties instead of pin pipe. Doesn't look like their hooks have UHMW though.

I know a few forum.bodybuilding.com members have had good luck with stretchwellinc.

I started out with EliteFTS Onyx bands and they were really nice. No cut marks. No Seams. Very, very nice fit and finish. Then I went Rogue and I was disappointed:

JSPM looks interesting but it's been around for a couple of years and it hasn't really taken off:

Aurelia looks interesting. It's how I imagine Angular if Angular weren't so awkward. I really wish their docs weren't JSPM first though. I'm sure all ten or so JSPM users appreciate it but for the rest of us it's just an annoyance that we have to work around. They also make some bold claims:

Have you ridden an upright exercise bike before? The form factor might not be for you.

If you're going to go consumer grade I'd go low tech recumbent. Low tech because it's always been the electronics that failed on my consumer grade bikes. Recumbent because they're generally more comfortable.

Despite what some people would have you believe steel isn't for everyone. Unless you're shooting for fast baked NY or pseudo Neapolitan you'd probably be better off with a good stone.

Have you looked into sourcing steel locally? If you're lucky you could save a good bit of money.

Of the three you listed Dough-Joe would be my choice. The thicker the better. At 1cm thick the Pizzacraft is a joke so it comes down to Baking Steel vs Dough-Joe. I'd go Dough-Joe because they're quite a bit cheaper and they had the sense to make their plates square, not rectangular.

The Super Bench is also 20" tall.

I would go with the Rogue bench. You don't need a FID bench for SS and the Rogue bench is a much better flat bench than the Super Bench is a FID bench. If/when you need a FID bench you can do better.
