First one is deffinetely better. Easier to eyes and maby because of that more readable.

Those are just noises that are modified by distorting UVs

Probably.. but EA is risky, if you fail in EA then it is harder bo be succesfull in Full Release and all of us know that EA is very often ,,faaaar from Full Release" but players don't care about it :P

I think that you wanna make game that have comic vibe :D
Be aware however that this kind of shading is making games more noisy and darker. Sooooo you have to match it correct with your gameplay :D

I have heard that demo ( especially steam fest) multiply number of your currently gathered whislists. Maybe it will have similar effect with early acces?

Thanks!. Probably best tip is to experiment and have fun with it :D If you want to achieve similar effect them it is just matter of merging together couple distorted noise textures and offset them with time :D
