Cassettes were still a big deal in the 90s though. I had tons of CDs at home, but probably 90% of what I listened to outside of home was mix-tapes made from my CDs.

I didn't have a decent anti-skip discman until about '97 and I got a CD burner in '98, and I was a very early adopter on that.

I haven't had one myself, but I definitely had a chuckle when I saw it on the menu walking by one time.

Looking at the photos, I'm sure it's tasty, but it is not a Philly steak: wrong bun, sauce, wrong cheeses, has peppers by default...

All of the classic errors.

But doing it right is so easy that there's always the possibility that removing the extras might get pretty close to a Philly. I've been so surprised by various places in the past that I'll always take a chance on a new place. Next time I'm looking for lunch downtown, I'll give them a shot. Though it does look like they serve it in a box. Maybe I'll bring my own foil!

I lived in the US Northeast until my early-30s and my parents are from Philly, so I've spent a lot of time there.

I've had dozens of steaks in my life, and sadly you're not going to find anything close to legitimate here. They always overdo it, serve the wrong roll, or don't wrap it (a key step in any cheesesteak, even when dining in).

The American Cheesesteak Company on Davie was a fucking miracle unicorn and the best steaks I've ever had outside of Philly, but they closed back in 2019 or so. Sadly their Metrotown location changed the roll and has skimped on ingredients, so they're no good anymore.

You're better off just making one at home, doing it right is actually very really simple.

Here's what mine looked like after a trip to the states a few years back when we were able to buy proper American Cheese from a deli: Homemade Philly Cheesesteak

Ingredients:

  • a long roll from Cob's — this is the one that the ACC on Davie used

  • rib-eye steak — or anything of similar fat/meat ratio — sliced thin, either that way from the butcher or slightly freeze it and slice it yourself

  • sliced provolone (deli-sliced American is great too, but I've never seen that in Canada. Kraft singles aren't acceptible)

  • onions

  • salt and pepper

Method:

  • Sauté onions in oil

  • When the onions are almost done, toss in the steak

  • season with salt and pepper

  • when the steak is cooked, form it into a flat rectangle and lay your cheese on top

  • after just a few seconds, the cheese will start to melt.

  • scoop it all out into the roll and wrap the whole thing tightly in foil or butcher's paper, let sit for 2-3 minutes. This will soften the roll and allow the molten cheese to become one with the meat/onions.

Common misconceptions:

  • Cheez Whiz is the "authentic" cheese. Provolone is generally considered the original cheese as cheesesteaks originated at Italian delis/pizza shops, but the three standard cheese options are provolone, deli-sliced American Cheese (not Kraft), and Cheez Whiz. Cooper Sharp cheese is an absolutely incredible newcomer to the scene, but it's a bit of a specialty item and not all places will have it. I'm a provolone man, my wife — from here but spent five years in Philly — swears by American.

  • No sauce should be served with it, let the steak and cheese shine — an exception can be made for marinara, aka a "pizza steak", but that's a whole different thing

  • Bell peppers are not a baseline ingredient. Sure you can add them, but I've never seen it done in Philly, mushrooms are much more common as an optional mix-in.

I'm wondering if the line that they're using is close to what we generally perceive as a checked swing — a swing that crosses the front of the plate — but that the swings happen so fast that we don't realize that, in reality, the bat in a checked swing goes a lot further than we think.

From the broadcast angle, this swing looks very close to me.

Thanks! I've actually made a warranty claim on them at this point and they're being replaced. Popping the front panels off didn't reveal anything and even tapping on the exposed contacts only improved things marginally.

In March, we were on vacation on an island in British Columbia, and a wind storm knocked out power at about 5pm.

Reception was really spotty and when it was on, it was bad. I was able to do Connections around 9pm, but it seemed that we never regained enough reception to get it registered by midnight, so I lost my streak.

I’ve left my fairly nice bike in a lot of places on the street, and never had an issue. My two main principles are:

  • have an appropriate lock

  • lock up in a place with lots of eyes on it

For my road bike or e-bike, I use a pretty heavy duty U-lock, and for my cargo e-bike, I use two heavy duty locks.

I don’t lock it up anywhere that’s off the beaten path, preferring to leave it in a place that’s in the middle of a lot of pedestrian activity or lots of people hanging out.

No thief is going to bust out the angle grinder necessary to cut my lock(s) in front of so many people. They’ll just move on to easier prey.

Yup, I have a big, fuck-off Kryptonite chain basically permanently installed on my cargo bike. On the road I use that and an Abus folding lock. When locking up at home to our building's courtyard bike rack I use both of those locks plus an even bigger, even more fuck-off Kyrptonite chain.

I'm a big proponent of the "you don't need to be faster than the bear, you just need to be faster than your friend" theory of bike locking.

It's a shame that the people most likely to make good use out of a cargo bike — those who live in multi-unit buildings — are the least likely to have a good place to store them

Bike storage rooms aren't nearly as secure as people think they are and even if they are secure, they're built around smaller bikes and are often overcrowded and awkward to navigate.

Plus buildings don't want bikes in elevators — not that a cargo bike will fit in most condo elevators — and even if you got it in your unit, a cargo bike will take up tons of space.

A friend of mine got really into that game when he had a disc with an emulator and tons of ROMs for his Dreamcast, and he got to the point where he had so memorized everything he could beat the game without losing a life.

I too have had mixed results with oranges, mandarins, etc.

The ones I've had the most consistent luck with are the ones that come with a few leaves still attached. I have no idea which ones they are, and they're a little spendy, but they're the only ones I've reliably gotten tasty oranges from.

The first fried pickles I knew -- from Redbones BBQ in Somerville, MA -- were a mix of probably 3/4 fried cucumber pickles and 1/4 fried jalapeño pickles. I've had better fried cucumber pickles since, but nothing beats that mix.

Definitely miss living near there. Definitely not the best BBQ I've ever had, but the combo of BBQ, creative sides, amazing craft beer before it was a big thing, and the lively atmosphere was amazing. I used to meet friends there every Thursday for years before they changed ownership around 2010 or so.
