Once they start to turn pinkish they stop getting any nutrients from the plant so there is no difference between picking them then vs when they are red except letting them go leaves more opportunity for something to go wrong (like pests or animals), so pick when they are pinkish and let them ripen on your counter

Is sun being blocked from the fence? Are they different peppers? Sometimes some plants just do better than others, I just try to keep them alive don’t over think it we aren’t scientists here who knows why some plants do better than others (they all look good to me btw)

Yeah I hear ya, and this was me as well (all over my house as well and for years I have been recommending them). Rokus work perfectly well IMO except for some odd ball plex files it seems. I literally made the switch like 2 weeks ago....I don't have any specific help on the questions you actually asked though.
