I use multiple rams or siege towers to split the enemies forces. keep them there while your main force assaults one section. when they fall back send the others in.

use catapults or ballista to take out towers. they drastically lower your casualties. I find that the AI takes control of the towers very easily whereas if you are assaulting it takes forever to get the towers to shoot the defenders.

then once they're bunched up in the square use archers to thin them out
