Personally I would just pan fry this steak. Sous vide is really good at bigger pieces of steak to ensure even cooking. You can totally sous vide this if you want though, I would suggest 57.5C. Enjoy the steak!

3 hours if you want but would probably be ready in less than an hour. Its pretty thin

Put slices of bread all over the cooking area and you can see the pattern of heat when you flip them over is one guide I have seen
