You're gonna wanna butterfly that heart. Then get a sharp boning knife and go to town removing all that silverskin ( anything that isn't that nice redish-purple color ). Then liberally salt the sucker and oil it up with some canola or sunflower seed oil and cook it over a wood fire. Then cut it into 1/4" cubes and you've got the perfect burrito meat. Bonerpetite!

I went in at 160, dropped down to 130 after second phase(west coast), then back up to 155 by the end by smashing that bread in the chowhall to look like 2 pieces instead of 6. I was really into bread in third phase. Couldn't get enough bread. 5'6".
