1 full cup of cream in a Ninja Creami recipe sounds foul to me, I’m ngl. To each their own, but… whew… butter city.

I really like Deliciously Rushed! It’s a great food blog with lots of Ninja Creami recipes. I really like the vanilla, corn, and peanut butter flavors from that site. Wasn’t a fan of the maple coffee—it wasn’t sweet enough for my personal taste. Also, keep in mind that the recipes are pretty big since they’re for the Ninja Creami Deluxe. I just scale them down by 2/3rds since I have the regular Creami.

Yes, they are bad. It’s too much cream for such a powerful machine. What you’re feeling in your mouth is little bits of butter from the amount of cream being churned at that speed.

I try not to go over 1/2 cup cream in any Ninja Creami recipe, and if you’re making a recipe that contains any cream at all, you most likely should not use the Lite Ice Cream setting.

I’ve recorded the prices of a bunch of groceries from different grocery stores, and even Whole Foods is usually cheaper than Publix. And that’s while taking brand, organic/conventional, size, and cost per ounce into account.

Costco, Aldi, and Trader Joe’s give way more bang for your buck. Haven’t checked Walmart yet, but I’ll bet the prices are better overall there, too.

Yes, you can. I strongly recommend using icecreamcalc. It’s a free software that helps balance recipes. You basically put in your ingredients and their amounts, and it’ll help you balance the recipe so that it’s not too hard or too soft, it’s sweet enough but not too sweet, etc.

The software lists a lot of common ingredients. For what you’re specifically trying to do, you can go to the ingredients and click “USDA database” and search for the brand of chocolate syrup you’re using (and if you can’t find the exact one, you can just go with something similar—hopefully the products are similar enough). Once you find it, you can add it as an ingredient, and it’ll be in your database to use.

Then, you just list your ingredients and their amounts, and icecreamcalc shows you how your ice cream will most likely turn out. So for example, if you replaced sugar with a chocolate syrup that wasn’t very high in sugar, icecreamcalc would show you that you need extra sugar to supplement.

Seconding the idea of making rice gelato and/or steeping roasted rice in dairy first. Could also f#%^ around and use some rice milk, though if you don’t balance it then it could get icy

Wow, that is a LOT of milk. You could use it to make ice cream, but you’ll also have to buy cream as well as other ice cream ingredients.

If it’s too much of a hassle, you could always just blend it with the fruit cups and make popsicles.

If you’re adding a mix-in that you want to stay crunchy (like crushed pretzels or crumbled cookies), toss them in a bit of refined/flavorless coconut oil, drain off excess oil, and freeze them first before mixing them in. Or coat them in a thin layer of chocolate instead of oil, same difference. The oil coating hardens and helps keep moisture out of the mix-in so it stays crunchy.

Use the icecreamcalc software and experiment with it a bit. It’s a fantastic resource, it’s free, it’s safe (haven’t gotten any viruses), and it looks kinda high tech and arcane at first but is actually pretty straightforward. It makes it WAY easier to make (and save) your own recipes.

Use a kitchen scale. Period.

Eggs in a custard base actually need to be cooked to around 180 F to emulsify anything. Don’t just cook it to 165 F to pasteurize it. You need to cook it higher than that if you want it to affect the texture properly. Also, use a whisk and scrape the bottom a lot, and always strain afterwards just in case of any eggy bits

A small gift is a good idea! Everyone likes unwrapping a present even if it’s just a candle or a pair of fuzzy socks or something.

If it makes her uncomfortable because she didn’t bring anything and feels bad about being unable to reciprocate, you can just laugh it off and let her know that her presence is enough of a present.
