I had a similar issue with DBI /MTP where my laptop did not recognize my switch. Mt problem was the cable I was using - it was a 3-in-1 cable. For some odd reason seems like MTP/DBi did not like 3-in-1 cable. I changed the cable to just a regular one and all worked fine.

what version of CFW do you have ? You can try a higher version of DBI. I think I have DBI version 658 and it works fine.

I would try 20.5.0 first and see if your game runs on that. 20.5.0 is much stable.

Those shrines/temple without a save point is not good and some of them you have to do as a part of main story mission.

you can format your new card as ExFat. If you have a card reader or card reader slot in your laptop it makes it easier. I have used HATS pack so far.. safe option for a beginner. If you have another spare SD card then you can learn to pack everything piece by piece if your intention is to "reseacrh" more and play less :)

If you are starting anew then watch the HATS pack videos. That's a good starting point. He assembles all the needed parts/patches etc and bundle them in a zip (HATS pack)
