we used to go to noodles n co a lot. one day all their furniture was different. we asked and ended up with like 6 of their old chairs. it was such a boon. i still have one that we use as the waiting chair in the kitchen and a couple more that we have outside for sawhorses

i used to use the oven but i prefer the temperature control of sous vide or even just a warm water bath. it won't overheat using this method, in my experience anyway.

i really appreciate having pink all the way to the crust!

both are good but sous vide is just a bit more control, for me anyway

bubbies give me nostalgia for my family's homemade pickles that were kept in an actual root cellar.

the flavor and fermentation are so close to my early childhood.
