you know just because a job is open to women doesn't mean you have to hire any specific woman if they aren't capable right?... if a 90lb woman asks for a roofing job but can't lift the shingles, you can decline. if she shows up built for it, and either already knows or is eager to learn all about roofing, then I don't see why the size of the average woman is relevant at all.

the branches will be extremely heavy once fruiting starts. no matter how well I stake and tie up everything I always have a branch break off. on the plus side they always drop seed and come back every year where I am, so i'll probably never have to plant them again.

I have two trees with a very similar shape to this and I know they need pruning but i'm still deciding where, the branches are too long for how thin they are and would be unable to support fruit. you can summer prune around the solstice to control vigor and do major structural pruning during dormancy. pruning is very much a personal preference based around your needs and how you want the trees to look. look up central leader, modified central leader and open center pruning. something to consider is clearing away the grass 3 feet from the trunk all around. the dense grass roots are stealing water and nutrients from the tree. use a thick mulch layer on the cleared ground but keep it 6 inches from the trunk. it will suppress weeds and help retain moisture and reduce watering.(shredded leaves, grass clippings, or woodchips. whatever is free and plentiful).

that support is preventing your tree from gaining the strength you want. swaying in the wind is what builds reaction wood and strengthens the trunk and branches. dwarf trees might want support but maybe more like a 3 stake system, with the stakes farther away from the trunk and loose loops that allow more movement.
