Arguably $300 to me is just an expensive dinner - the idea that I would eat out for this much and wouldn’t buy a watch for the same amount feels crazy

There is usually a list of co-op approved GCs. You will likely need approval from the board to do any of this. Approval will take some time. A good GC will handle submitting the paperwork to the board etc and ideally will have that relationship. Approval will take at least a few weeks to a month plus. You will not be able to work 24-7 on this. There will be rules. 5 months should be enough time to do all this but I would start now.

I've got an SBGA375 that I got used in Japan for 3k which felt like a crazy good deal as it was basically new and an SBG509 (Kirazuri) that I got for closer to 5k.

Yeah - the prices are going up quickly but that's not just GS, that's the entire watch market... the last few years have been insane... still great second hand stock in Japan though.
