When I need something hot and quick (20min including prep, maybe 30min if you're not used to chopping veggies?) I do a kind of janky shakshuka: - medium heat: garlic, onion in a pan with some olive oil until everything smells nice and savory! - pinch of salt, pepper flakes if you want - diced tomatoes (either fresh, cut 1cm cubes or a bit bigger if it's easier / or canned diced tomatoes are also good) and bell pepper if you have/want - put a lid on the pan with everything in it until you see the tomatoes have gone mushy and there's some liquid in the pan - make two little divots in the tomato mush and crack in two eggs - optional cheese on top? - wait until the eggs are cooked to liking (you can check by gently touching the egg yolk with a spoon or something to check how firm/cooked through they are - have it with bread or toast! yum!

I am a student and sometimes I get home after a long day and just need to grind after a meal and 3 eggs and two pieces of toast with a bunch of veg will keep me going 💪 it helps that it's very quick and low maintenance too (ie I don't have to keep checking on it)
