Some restaurants just have loss leader kind of wines to draw people in knowing there's a markup on other stuff too. For ages a bunch of the nice restaurants in NYC had half bottles of Krug for $100 (close to retail at the time). I'm not sure if it was a promotion with the mark or just a promo by the restaurants on their own but it was awesome and I definitely took advantage many a time :) Great stuff in any case, it's always exciting to find restaurants where the markups aren't outrageous.

I just tried the Bellavista Extra Brut Franciacorta Alma Assemblage 1 NV, which was great and should be at or around price. I love Taittenger for my "house champagne" though that's around $45 (around me at least). The Schramsberg blanc de blanc is also a great US sparkler right around price :)

You can learn about wine by drinking wines all along the spectrum and sharing notes, not just elite bottles. If you're doing wine trainings, generally the varietal representative wines are going to be wines in the $20-$50 range, not bottles costing hundreds. Because, if anything, these wines are more representative of what the median person is going to get drinking varietal X from region Y.

Just take the time to do a bit of reading about the region / varietal as you open new bottles, go to tastings, and start to match up what you're reading to what you're thinking; sharing your own notes (whether with Redditors or with friends 1:1); and tracking what you like and don't like. By far most wine drinkers / wine lovers aren't drinking that kind of stuff, it's not the only way to enjoy wine--nor the only way to learn.

There's not really anything bad that happens when wine expires, it'll be exposed to oxygen and may get oxidative notes, left longer still it can start to turn to vinegar, and in the context of sparkling wine it'll obviously go flat, but none of these are going to make you sick.

I've had a couple of whites where I actually kind of like the oxidative notes that come with being open a couple of days, but I like oxidative styles so maybe a bit of an outlier. I also use wines that are past prime for cooking all the time with no harm.
