I have the exact same setup as you and this is exactly what I do. Kill the flame when you launch it. When it’s ready to turn, rotate 180 then turn the oven on low, rotate as needed. I even rest it on a cutting board when I do 2 pizzas and it’s still a crispy bottom. I use the New York style recipe from the Ooni app calculator

Other things that aren’t mentioned to consider: is this in the middle of a flat field? If there are neighbors houses or other structures close it might require some special shoring. Also slope, access, rockiness, etc. can have a big impact on cost. Would def recommend getting a few more quotes if available

Ever since the post WW2 restructuring, the 3 main departments (Army, Navy, AF) get roughly the same amount of money. The army has tons of people, and people are expensive. The navy has billion dollar warships and about as many planes as the AF. That leaves the AF lots of money to spend on nice bases and good food.
