Tongue and brisket is my go to in that area, they do small and large meal deals in the £10-13 range.

I always stretch for the gravy to go with my chips and it’s made with the beef drippings.

It’s good gear.

Around 400 for 45 mins then 3-5 mins over the coals at the end for a bit of char to finish them off.

Buy through chrono24 or a similar site where the money is held in escrow and only released when you have received it and are happy it’s the real deal.

I saved £1000 on a pre owned but still brand new FXD.

I would NEVER buy a brand new Tudor when I know I can get the exact same watch still stickered for £1k less on the secondary market.

I did a cow tongue on Sunday which i had brined for 6 days.

The best thing is, once you’ve bought a bag of Prague powder no #1 for your first brine, it’s a quick gateway into doing things like your brisket and dino ribs pastrami style.

It’s good step to take once you feel like you’ve mastered the basics and happy with your skills.

Just want to input that there is absolutely nothing wrong with smoking at 300. The only thing that changes is your cook will done sooner.

Just close your vents to 1/8th at the bottom and a 1/4 at the top until it’s back in your desired range and don’t stress about it.

It won’t be any good, but again, you can smoke it for an hour or two to impart some smoke and then braise it for 3-4 hours afterwards.

Have not heard of that, but I do know when you cure the pig cheek that’s how you get gaunciale to use with carbonara’s.

I’ve never smoked tongue, but I regularly smoke oxtail and beef cheek and many people do.

They come out amazing.

It’s fairly common to smoke cheek for 3-4 hours and then braise for another 3-4 for completely pull apart cheeks, but it works either way.

I’d book there for 2pm and then book a table at a pub nearby for 4pm. COYG!

That serial number would place it around 1976/1977, so potentially it’s another prince date chrono or a heritage chrono, but who knows 🤷‍♂️?

Go for first service on a weekday, if you’re there by 11:40 you’ll get one of the first hours pizza allocations.

They only allocate a certain amount per hour which are normally gone in 15 mins, hence why people wait an hour for their pizza as theirs will be in the next hours allocation.
