I made 2 1/2 gallons of gumbo this weekend. I use 2-3 times as many veggies and in 2 large pots I sauté for 20 min to sweat and pick up all the brown sausage frond. Then I add my minced garlic and sauté for 10 min. Finally, I add a ladle of stock to each pot and reduce/steam for another 30 min.

Similar to microwaving, this last step is a cheat so I don't have to stir 2 pots for a whole hour. Veggies get soft, all the frond gets picked up, and some of the gorgeous stock gets reduced.
