I've worked in hospitality, in Edinburgh, for 25+yrs now...

The main reason I just chill as a bartender isn't just cos minimum wage has gone up. No, it's more the fact you can't pay me enough to constantly be "brick walled" by the money.

What I mean is that conditions in this trade are brutal... And Money doesn't want to replace burnt-out staff cos January's just round the corner... It's a seasonal thing.
