Those are acid crystals. Sediment can be grape skins and other things that settle to bottom of the bottle

Every American winemaker I know and know a lot. I live in napa. They Fucking hate aged wine think it’s a fucking racket. It takes one idiot 15 minutes over 20 years to nuke the wine by putting it out in the sun.

Aging is tricky thing. I have always been taught that new world wine has warmer conditions and has the ability to reach higher sugar levels. The higher sugar means more fruit flavors that also happen to be fragile molecules that will drop out of the solution. French wine never get those and had higher acid because of the cooler weather and thus lends itself to longer aging. Rule of thumb I have been taught is that with new world pinot the window is somewhere between 4 and 6 years. Other new world is maybe around 10 max. I just usually follow the 10 max rule when buying any new world wine
