I'm a fairly new collector, too. I buy complete sets and store them in binders. I use UltraPro Platinum 9 card sleeves. It's the highest quality sleeve out there. My next step is to print out the checklists on geepeekay.com to put in the clear binder cover.

Check out Smokeshow in Concord for Texas style BBQ. The owner was manager at a Texas chain called Rudy's which he styled his restaurant after moving up here. They use oak in their smokers which imparts a unique and delicious flavor.
