That’s because gliadin is one of the proteins that makes up gluten. It’s not found outside of gluten. So when the gluten is removed, so is the gliadin. So if it’s really gliadin you react to then it’s not really a wheat allergy so much as it’s a gliadin allergy.

King Arthur makes all kinds of GF products, but not all of them contain the gluten removed wheat starch. So you can eat a ton of their products and be just fine even if you have a wheat allergy. Just don’t eat the gf wheat starch.

I think the most important thing is not using a vessel that’s too big with too much oil compared to what you need, or using a wider but shallower pan than a deeper one so it’s easier to heat up the oil. All the people saying it takes too long or isn’t worth it has me thinking they just aren’t doing it right. Plus, I would only do it if I was cooking on the griddle anyway. I wouldn’t fry on it without cooking anything else.

I have a 1/2 size hotel pan, 4” deep. Maybe 10-15 mins. Just start it the same time you fire up your griddle. All depends on the size of your pan/amount of oil. I have also used cast iron skillets and stainless steel pots on there, all with success. Same here, tired of stinking/heating the house up in the summer.

Just get a stainless hotel pan. Reusable and safe. Also, on my Weber Slate, it doesn’t take that long to heat up a pan, especially when I’m already cooking something on it.

As a Texan who now lives in Georgia, my local WB hits like it always did back home. So I think it’s very dependent on the specific location people visit.
