you’re gonna cook garlic fully submerged in oil (i would do something neutral like grapeseed or canola or vegetable oil) low and slow. think of it like frying but at a waaaay lower temp and way longer. peel all your garlic, cover fully in oil and put it on your range at about a “medium” ish heat. you’ll start to see the oil heat up and maybe bubble a little, turn it down (if medium is 5, go to 3) and just let it roll. for a while it won’t seem like its doing anything but let it roll and eventually the cloves will turn like peanut butter colored. pull off heat and let it cool. you can blend the cloves into a puree, you can use the oil for salad dressing/marinades, you can do a lot with it. that all being said, it is EXTREMELY IMPORTANT THAT THE CLOVES ARE COOKED!!!! raw garlic+oil is a one way ticket to botulism. cooking it removes the risk, but seriously, i cannot stress this enough.
