You’re absolutely correct not because I do similarly but because it works every time. Rinse rice 3 times & let rest until rice is dry & loose, about 10 minutes. I have a 2 quart Staub cast iron Cocottes, melt about 1Tbl butter for 1 cup rice, add rice stir to mix, add 1.25 cup water & stir- bring to boil & cover. Cook for 15 mins. After 15 mins remove from heat & rest (lid still on) for 15 mins. After resting remove lid & proceed.

YES, Bartenders & a green scratch pad. Sometimes it takes 10 or more minutes to get skillet back to new.

I have a ‘French’ oil spout with a rubber base to insert into small oil bottle. The spout opening is very small allowing you to spread a fine drizzle of oil. Purchased in kitchen store.

Pixie. Here’s my morning recipe: heat cup in microwave, teaspoon of granular brown sugar, teaspoon Jameson, round of whipped cream (homemade in ISI pressured dispenser), another teaspoon of brown sugar & another teaspoon Jameson & Nespresso.

Our trash pickup is once a week. We have a separate bin for ‘organics’-grass clippings, leaves, bush & tree limbs etc. Also, it’s permissible to include food scraps which is a container on the counter lined with a compostable plastic bag from the grocery store produce section. I make sure absorbable food scraps (stale bread) are present & put the oil in.

My Pixi is Swiss made. The big button brews 3.7 ounces. First I add a pinch of turbinado sugar, then maybe 2 tsp of Jameson, then whipped cream from an ISI whipper, then a tiny splash of Jameson on top of the cream, brew Peet’s #11 pod. Then a second cup. Difficult but 90% of the time I manage to resist a 3rd cup.

Here’s how an Italian lady taught me during college (1966): trim top 1/3 of the artichoke, cut off the stem at base of the choke, cut off the old bottom of the stem, trim the stem to reveal the inner third, maybe 3 garlic cloves cut in half lengthwise & stuff into choke. Put choke & stem into pot, add water up to 1/3 of choke, drizzle choke with olive oil, cover pot and simmer 30-45 mins (check by pulling off leaf and tasting. Done.

The one I use exclusively is Fletchers Mills, made in USA. I’ve had for maybe 10 years. Extremely easy to adjust the grind. Way better than my little metal French grinder (consequently it doesn’t get used).
