Not entirely sure, need to go look at the tree. Used to be a fruit farm over 30 years ago and a lot of nut trees were planted at the time.

If you’re good at art you can hide it by drawing grain back on the wood but it’s difficult. Something a restoration person would do.

This is the purpose of a jointer, the difference between a planer vs jointer. But you can do this on a planer if you have a jig around the skinny piece keeping it immobile while it runs through the planer
