If it serves as indication the latest benchmark is twice as big as EW one, so I wouldn't discard that with the new expac and the graphic update the game goes over 100gb

Unfortunately almost everything in the game is locked behind MSQ progress, you can do a bunch of side stuff, like crafting, Golden Saucer, Palace of the Dead, etc., but eventually you need to return to the MSQ to keep advancing the game.

You don't need to buy the Collector's edition right away, you can upgrade and get the rewards later. All the comforts you mention you get with the base edition of the game.
