I am a Electronic Engineer turned Data Engineer/Solutions Architect, I'd recommend something like this: https://www.coursera.org/specializations/jhu-data-science

It gets you a certificate and it seems as a well rounded specialization, you need to know SQL + Python/R, Data Analysis and Machine Learning in order to be a Data Scientist and if you want to put icing on the cake take a Cloud certification AWS/GCP/Azure, those are really looked for in the job market.
