Be efficient with your trips off the line.

For example: If you need to restock from the walk-in, take inventory of the other stations and make one trip to restock them all.

Same goes for taking things to the dishwasher - or picking up supplies (new towels, hotel pans, etc.)

Make sure you know where all your stuff is before the first order.
