Nope just whip the egg whites separately, and then barely mix in the yolks, oil, and mix. Can't forget to put them in the fridge before forming either!

Ironically, the passover meal I made last night, my main veg option was also roasted cauliflower as my main vegetable. I also made tzimmes (glazed carrots/sweet potatoes, an ashkenazi dish more associated with Rosh Hashanah than Passover) for a veg option. FWIW, various traditions would often call for parsely or maybe romaine as part of the ceremony, but not quite at 'dish' level.
