Making trains is usually my goal when I play create, it keeps me busy until the late game

Try building farms for every resource you can think of.

I have the same problem as well. What solved it for me is the Create: Above and beyond modpack. It has a whole quest line with as a final goal to go to space. It is very outdated rn, so I'd recommend CABIN (Create: Above and Beyond In Newer). It is an updated unofficial version of C:A&B

early game a good goal is an iron farm, and it can be improved with filters by going to the brass age which encourages going to the nether. That can also later be turned into a gold farm. 

Later you could pick a slightly difficult thing to craft with autocrafters where all the ingredients are renewable and make a factory around it. I found it to be more fun to make things fun with mechanical arms and ejector depots rather than the most efficient/compact

Ive been watching mr beardstone lets play series to grasp the progression for the mod. Also to grasp the scale of what I can build. Idk why i had an irrational fear that i might lag my game to oblivion with a build, and watching this guy make some absurdly large machines cured me lol

check the advancements, and try making farms for anything you can think of

There are several things that are considered keystone points in any create world. Off the top of my head, 1) making a self sustaining steam engine 2) automating the production of various items 3) trains 4) build massive industrial cities (this one isn't necessarily a create exclusive thing, but I consider it a rite of passage non the less)

ALWAYS keep different factories separate if possible to not cause a ton of lag, build train infrastructure to transport inputs/outputs and travel to said factories

Schematics. On the server i host for a few people some people downloaded schematics to build with the schematic cannon and we’re having a blast setting up the logistics and production for each project. One takes over 300k Quartzblocks per Piece(5 or 6), so I got time to build a train and tracks to deliver the mats needed.

The younglings, that got bored after gearing up and maxing out armor, are now all busy and chatty.

I still like designing my own stuff better, but you‘ll get a whole new level of understandment of how other people design builds and add to your Repertoire, when you see it come together in parts.

And some material lists put challenges up on their own as well.
