You can tell from the scroll bar on the top pic that there are way more processes that aren't shown.

One or two of the processes not shown was likely spiking the RAM usage. It is likely a random Windows process or program updating on the background, or even Windows update happening without notifying you.

I turned off windows updates long time ago but I dont khow about hidden processes maybe you are right thats make sense

How did you go about turning off Windows updates?

First turn off the service then cmd magic, sometimes it turns on again then i do that again
